Restaurant
Off the Grid
Linen-draped tables line the pool deck, where the open kitchen serves an entirely plant-based menu including heart of palm tuna.
Opened in 2021, the family-run Mother Earth Vegan Hotel has just 14 guest rooms and is ideal for those who are conscious of their environmental footprint: it’s entirely solar-powered and as the name suggests, vegan.
At the table
Wooden barstools sit under an awning by the pool, where the bar pours cold-pressed juices and organic vegan wines.
How it began

Founder Karen Salstein quarantined here with her family in 2020, converting their private home into Costa Rica's first vegan hotel.
