More of a retreat than a resort, The Rooster is deliberately understated and discreet: There’s no sign, just a bumpy dirt track that leads to a bamboo hut at the entrance.

The hilltop bar serves botanical cocktails under a timber pergola. Inside, The Disco plays retro music along pink velvet banquettes.
How it began
Founder Athanasia Comninos spent seven years planning the property, naming it after the valley's crowing roosters as a symbolic wake-up call.
