Hotelier Paddy McKillen conceived the modern machiya as the Kyoto sister property to Provence’s art-steeped estate, Villa La Coste.

Jean-Georges Vongerichten crafts French-Asian dishes using local Kyo-yasai vegetables, while a six-seat bar pours omakase cocktails and Provençal vintages.
